Made from excellent, clean ingredients.
Derwent Distillery emphasises ethical and sustainable practices throughout its production process. They prioritise high-quality, locally sourced ingredients, including Tasmanian barley and pure water from the Derwent Valley, while selecting sustainable botanicals for gin production. Their distillation process minimises waste, repurposing byproducts like empty boxes for shipping. The distillery complies with Australian employee laws, ensuring fair wages and safe working conditions, verified by Work Place Safe and national safety guidelines. Adhering to rigorous Australian food and beverage safety standards, all products undergo thorough quality control before release. The brand crafts all of its whisky and gin in Tasmania, specifically in Dromedary and acknowledges the Palawa people of Lutruwita, paying respect to their connection to Timtumili minanya (The Derwent River).
Derwent Distillery prioritises sustainability across its operations, employing locally foraged botanicals such as bull kelp and coastal tea tree leaf for gin production and partnering with Tasmanian growers for high-quality ingredients. The distillery operates on a 5kW solar power system for clean energy, utilises a recycled water system to conserve water during distillation and ensures that its bottles are made from 100% recycled glass. Their packaging includes labels with recycled materials and compostable closures made from natural cork and wood. A bottle return program encourages customers to return used bottles for cleaning and reuse, complemented by bulk refilling options for bars and restaurants to minimise waste. Shipping materials consist of recycled cardboard and compostable paper tape, while merchandise is sourced from salvaged cotton, showcasing a comprehensive commitment to sustainability.
Derwent Distillery supports local and environmental initiatives in Tasmania, including the Handfish Conservation Project (THCP), where a portion of Last Sanctuary Organic Gin sales funds research for the critically endangered Red Handfish. The distillery raises awareness through product labeling and educational events. As a founding member of Friends of Bonorong, it aids the Bonorong Wildlife Rescue with fundraising efforts for injured Tasmanian wildlife. Derwent prioritises local suppliers for ingredients and packaging, ensuring economic support for the community. It engages in education and advocacy on sustainability practices and sells sustainable merchandise in its tasting room, featuring clothing made from 100% recycled materials. Moreover, the tasting room is furnished entirely with repurposed and second-hand items, emphasising waste reduction.

Product Reviews by Experts

The very authentic whisky flavour is bold and full, with a satisfyingly rich and woody aroma that hits the nose beautifully with every sip. The colour of the whisky is also red/brown/tan and glistens just as it should. With ‘top to toe’ consideration at every stage of the production process and then onto the packaging and distribution, this is a brand that clearly demonstrates a true commitment to the natural environment of Tasmania. It’s both heartening and inspiring!

I enjoyed the bottle, the design, but mostly the whiskey- it is wonderful! The use of pure water gets me. I can’t stand municipal water in my booze if it can be helped and I love that they put a focus on that.

As a lover of malt whisky and Tasmania, I like being able to combine the two into a delicious dram, to be enjoyed solo and with friends. I like the internal commitment to sustainability through day-to-day business operations and production decisions and the external commitment to supporting people and projects that look after the environment around their distillery.
